Roasted Red Pepper, Hummus & Rocket Toastie


1 large red capsicum, chargrilled, skin removed
4 slices Goodness Grains Swiss Bread
3 tablespoons hummus
6 Kalamata olives, halved, stones removed
large handful rocket leaves


Slice the capsicum into long strips approximately 1cm thick.

Spread the hummus over all four bread slices.

Cover two slices with the capsicum, rocket leaves, and olives.

Place remaining bread slices on top, hummus side down, and toast until golden.

Slice and serve.

Serves 2.
