Prosciutto, Rocket & Sundried Tomato Cocktail Sandwiches
6 slices Goodness Grains Soy and Linseed bread
2 tablespoons cream cheese
small handful rocket leaves, stems removed
4 slices prosciutto
2 sundried tomatoes, finely chopped
Cut the crusts from the bread and roll the slices out gently with a rolling pin just to flatten a little.
Spread each slice with cream cheese.
With a bread corner facing you, arrange rocket, prosciutto and a sprinkle of sundried tomato across the bread.
Neatly roll on the diagonal using the cream cheese to seal the bread slice together.
Cut in half and sit on a platter with the pointed end facing upwards.
Makes 12 sandwiches.
